Spaghetti with spicy shrimp and Swiss chard

Ingredients

  • kosher salt and freshly ground black pepper
  • 1 lb fresh spaghetti
  • 3 tbsp olive oil plus more for drizzling
  • 6 cups sliced swiss chard leaves stems removed before slicing
  • 2 garlic cloves, minced
  • 1/4 cup sliced jalapenos
  • 1 lb shelled and deveined medium shrimp

Step 1

in a large pot, bring 5 quarts water and 3 tbsp salt to a boil. add the pasta and cook until just al dente, about 1mins less than the package directions. occasionally give the pasta a stir so it doesn't stick together. scoop out and reserve 1/2 cup of the pasta water before draining the pasta.

meanwhile, put a large skillet over medium-high heat. add 2 tbsp of the olive oil followed by the swiss chard, garlic, jalapenos and a pinch of salt. cook stirring occasionally until the swiss chard begins to wilt, about 2mins.

scoot the greens to one side of the pan. to the open space, add the remaining 1 tbsp olive oil. season the shrimp with salt and pepper, and add to the pan. cook for 1 mins per side until just cooked through.

add the pasta and reserved pasta water to the pan, and cook for 30 secs, stirring to blend.

remove from the heat, season with salt and pepper, and drizzle with olive oil and serve.
