Ingredients

  • 1 3/4 cups sugar
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon allspice
  • 3 eggs
  • 1 cup oil
  • 2 teaspoons vanilla
  • 1/2 cup grated carrots
  • 1/2 cup crushed pineapple
  • 1/2 cup raisins
  • 1/2 cup coconut
  • 1/2 cup nuts, chopped (optional)

Preparation

Step 1

Combine sugar, flour, baking soda, cinnamon, salt and allspice; mix together and set aside. In separate bowl combine remaining ingredients. Mix all ingredients together until just mixed. Bake in muffin tins at 400 for 20 to 25 minutes.
