  • 1 1/2 pounds peeled, cubed yukon gold potatoes
  • 1/2 to 1 cup milk, warmed
  • 3 tbls mascarpone cheese
  • salt

Preparation

Step 1

Put potatoes in large saucepan and cover with water. Salt. Bring to a boil, reduce heat and simmer 15 minutes or until tender. Drain and return to pan. Add warmed milk and cheese and mash with hand masher.
