Turkey Sausage and Pear Stuffing

Ingredients

  • 3 t EVOO
  • 1 loaf whole grain bread, cubed
  • 1 lb turkey sausage
  • 1/2 C low sodium chicken broth
  • 4 celery stalks, chopped
  • 1 medium onion, chopped
  • 1 pear (Bosc, Bartlett or Anjou)
  • 1 T sage
  • 1 large egg
  • 1/4 C parsley
  • 1/4 t salt
  • 1/4 t pepper

Preparation

Step 1

Heat oven 350. Lightly oil a 9 X 13 baking dish. Place bread cubes into large bowl.

Remove sausage from casing and break into 1/2 inch pieces. Add 1t oil to skillet and cook sausage over mudium heat until brown (~3 minutes).Add to bowl with bread cubes.

Return skillet to heat and add 2T broth. Scrape browned peices from bottom of pan. Add remaining 2t of oil, celery and onion. Cook until soften (~6 minutes). Add pear amd sage and cook 2 minutes more.

Add to bowl with bread and sausage. Add egg and stir to combine. Add remaining broth, parsley, salt and pepper. Mix well. Spoon into baking dish and bake ~ 30 minutes until top is crispy and stuffing is heated through.
