Greek Chopped Salad

Ingredients

  • 3 Tbsp. lemon juice
  • 2 Tbsp. red onion, minced
  • 3 tea oregano, chopped
  • 1 garlic clove, minced
  • 1/8 tea. salt
  • 1/8 tea. pepper
  • 1/8 tea. sugar
  • 4 Tbsp. olive oil
  • .
  • 2 hearts of romaine, chopped (8 cups)
  • 1 medium-sized cucumber, peeled, seeded and cut into 1/2" pieces
  • 2 cups cherry tomatoes, quartered
  • 1 14-oz can chickpeas, drained and rinsed
  • 1/2 cup chopped parsley
  • 1/3 cup[ chopped pitted kalamata olives
  • 5 oz. feta cheese, crumbled

Preparation

Step 1

In a small bowl, whisk together lemon juice, red onion, oregano, garlic, salt, pepper and sugar. Slowly whisk in olive oil.

In a large serving bowl, combine romaine, cucumber, cherry tomatoes, chickpeas, parsley, kalamata olives and feta.

Drizzle with dressing and toss well to coat, serve immediately.
