Ingredients
- 1 box spaghetti
- 1 lb sirloin steak
- 2 cloves garlic, minced
- 2 T oil, divided
- 3 c broccoli florets
- 1 md bell pepper, cut into 1/2" strips
- 1 med onion, cut into 8 wedges
- 3 T minced fresh ginger
- 1 serrano or other hot chili pepper, minced
- 1 can light coconut milk
- 1/4 c red curry chili paste
- finely chopped roasted peanuts

Preparation
Step 1
Cook pasta. Drain and return to pan.
cut steak into 1/4" thick slices. toss with garlic; set aside.
Heat 1 1/2 t oil in skillet over med hi heat. Add half of the beef; stir-fry 1-2
min til outside is no longer pink. Remove from skillet. Repeat with 1 1/2 t oil
and remaining beef; remove from skillet Add remaining oil to skillet plus
broccoli, bell pepper and onion Cook and stir 1 min.
Add 1-2 T water; continue cooking and stirring 1 min Stir in ginger,chili pepper,
coconut milk and curry paste and bring to boil; reduce heat and simmer 3-5 min
until veg are crisp-tender. Return beef to skillet; remove from heat.
Toss beef mixture with pasta. Garnish with peanuts.
