Sweet Grits and Bacon Shortbread

Ingredients

  • 1 (17.5 ounce) package sugar cookie mix*
  • 2 (1-ounce) packages butter-flavored instant grits
  • 1/2 cup butter, softened
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 t. salt
  • 1 large egg
  • 1 pound bacon, cooked and chopped
  • 1/2 cup shredded Cheddar cheese

Preparation

Step 1

1. In a large bowl, add sugar cookie mix, grits, butter , flour, cornstarch, salt, egg, bacon, and cheese, stirring until mixture forms a ball. Roll into a log, about 2 inches in diameter. Wrap in plastic wrap, and refrigerate for 30 minutes.
2. Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper. Remove dough from regrigerator. Remove plastic wrap and cut dough into thin slices. (You can also roll out dough on a lightly floured surface and cut with a cookie cutter.) Place slices on prepared baking sheets. Bake until lightly golden and crisp, about 7 minutes. Serve warm or at room temperature.
