Salmon Hash

Ingredients

  • 6 ounces smoked salmon, in strips
  • 1/2 cup diced red onion
  • 3 tablespoons capers
  • 3 tablespoons nonfat sour cream
  • 2 tablespoons horseradish
  • 1 tablespoon Dijon mustard
  • 2 tablespoons light butter
  • 1 teaspoon vegetable oil
  • 1 pound hash browns, frozen

Preparation

Step 1

1. Combine salmon-mustard. Season.

2. Saute potatoes in oil until golden. Add salmon. Heat through.
