Ingredients

  • 5 whole star anise
  • 1 cinnamon stick, broken into pieces
  • 2 tbsp fennel seeds
  • 1 tbsp Szechuan peppercorns
  • 1 tsp whole cloves
  • 1 tbsp packed light brown sugar
  • 2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1 tsp garlic powder

Preparation

Step 1

In small heavy bottomed skillet, toast star anise, cinnamon stick, fennel seeds, peppercorns, cloves over medium heat, stirring until fragrant 2-3 minutes.

Let cool; transfer to spice grinder. Grind until blended. Place spice mixture in small bowl; stir in brown sugar, salt, cayenne pepper and garlic powder.
