Ingredients

  • 3 Tbsp. olive oil
  • 1/2 cup thinly sliced onion
  • 10 eggs
  • 1 cup finely chopped fresh spinach
  • 1/2 cup grated parmesan cheese
  • 1 Tbsp. chopped parsley'
  • 1 small clove garlic, crushed
  • 1/4 tsp. pepper
  • 1 tsp. salt

Preparation

Step 1

Preheat oven to 350 degrees. Heat oil skillet. Add onion, saute until onion is tender and golden brown (about 5 minutes). In large bowl combine remaining ingredients. With wire whisk beat until well blended.

Pour onion into egg and spinach mixture and pour into a square pyrex dish. Bake uncovered until top is set.

Cut into wedges.
