Ingredients

  • For the slaw

  • ½

    head purple cabbage, roughly chopped

  • ½

    head green cabbage, roughly chopped

  • 1

    cup matchstick carrots

  • 1

    head (or about 1 cup) roughly chopped fresh cilantro

  • For the dressing

  • ½

    cup avocado oil mayo (order HERE or make your own via the recipe in my book)

  • ½

    fresh avocado

  • ½

    fresh jalapeno, seeds removed for less spicy option

  • 4

    limes, juiced

  • ¼

    teaspoon fine sea salt

  • cracked black pepper, to taste

Directions

Toss all the slaw ingredients together in a large bowl and set aside. Place the dressing ingredients in a blender or mason jar (where you can use an immersion blender). Blend on high for 1 to 2 minutes, or until smooth. Add more lime juice (or water) if needed to get the consistency you want. Pour the dressing over the slaw, toss to combine, and serve!
