Ingredients
- 1 cup(s)fat-free plain Greek yogurt
- 2 Tbsp extra virgin olive oil
- 2 tsp paprika
- 1 tsp ground cumin
- 1/4 tsp ground cinnamon
- 1 tsp crushed red pepper flakes
- 1 Tbsp lemon zest
- 2 Tbsp fresh lemon juice
- 1 tsp smoked salt
- 1 ⁄2tsp black pepper
- 5 clove(s), medium garlic clove(s), minced
- 1 1⁄2 pound(s)uncooked boneless skinless chicken thigh(s)
- 1 large uncooked red onion(s), cut into wedges
- 1 spray(s)olive oil cooking spray, for spraying grill
Preparation
Step 1
In a medium bowl, combine the yogurt, olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic.
Cut chicken into strips or chunks (to be skewered later).
Put chicken in yogurt mix and refrigerate overnight.
Thread the chicken onto skewers, folding if the pieces are long and thin, alternating occasionally with the red onions. Be sure not to cram the skewers.
You can cook on grill or in air fryer (this methods takes about 20 min).
Serve over rice or in heated pita pockets with lettuce, tomato and yogurt sauce (see separate recipe)
