Ingredients

  • 1 c oatmeal
  • 1-1/2 c boiling water
  • 1/2 c butter
  • 1 c sugar
  • 1 c brown sugar
  • 1-1/2 c flour
  • 1 t cinnamon or vanilla
  • 1 t baking soda
  • 2 eggs, beaten
  • Frosting
  • 1 c sugar
  • 1 stick butter
  • 1/4 c evaporated milk
  • 1/2 c nut meats
  • 1 c coconut
  • 1/2 t vanilla

Step 1

Pour water over oatmeal and butter and set aside. Combine dry ingredients and add oatmeal mixture. Add beaten eggs and beat together. Bake in ungreased 9x13 pan, 30-40 minutes at 350. Check with toothpick.

For frosting: Bring sugar, butter and milk to a boil. Remove from heat and add the nut meats, coconut and vanilla. Spread on cake and broil 3-5 minutes on low. Can add chocolate chips on cake before frosting, if desired.
