TOMATO-ORZO & SKILLET CHICKEN

Ingredients

  • 4 bone-in chicken thighs
  • 1 tsp oil
  • 4 cloves garlic, chopped
  • 1 tbs oregano
  • 1/2 cup white wine or broth
  • 8 oz orzo
  • 1 cup chicken broth
  • 2 tsp grated lemon zest
  • 28 oz can whole tomatoes
  • 1/4 cup grated Parmesan cheese

Preparation

Step 1

Heat oven to 400°. Line a baking sheet. Heat a skillet. Rub chicken with oil, season, cook until brown, transfer to sheet. Discard all but 1 tbs fat from pan. Add garlic and oregano to skillet, cook 1 min. Add wine to skillet, cook 1 min. Add orzo, toss. *Add broth, zest, and tomatoes, breaking them up, to skillet. Bring mixture to a simmer. Transfer skillet to oven along with sheet of chicken, cook until chicken is cooked through, orzo is tender 15 min. Fold cheese into orzo. SERVE with chicken & ENJOY...
