Ingredients
- 8 oz. broken spaghetti
- Olive oil
- 1 c. chopped scallions
- 2 tsp ground cumin
- 1 &1/2 c. chicken broth
- 14 oz. can diced tomatoes with chilies
- Salt
- Chopped cilantro
- Cotija cheese
Preparation
Step 1
Toast spaghetti in a skillet with olive oil over low heat, 4 minutes. Stir in scallions and cumin. Add chicken broth and diced tomatoes with chiles. Simmer, stirring, until the noodles are tender, 12 minutes. Season with salt. Top with chopped cilantro and crumbled Cotija cheese.
