Red Cabbage and Wine

Ingredients
- 1 head ot red cabbage (about 2 lbs)
- 4 to 5 strips of bacon
- 1 medium onion
- 1 cup red wine (medium to dry Burgundy)
- 1/3 cup packed brown sugar
- Few grains cayenne pepper
- Salt to taste
- 2 large Granny Smith apples
- 1/4 cup cider vinegar
- 1/4 cup butter

Preparation
Step 1
Saute bacon and onion. Cut cabbage in quarters, remove core, and shred coarsely. Add with all of the other ingredients, except vinegar and butter. Simmer on low heat until cabbage is tender (about 30 minutes).
Add vinegar and butter and toss lightly until butter is melted.
Yields 6 servings.
