Pecan Tarts

Ingredients

  • For Pastry:
  • 1 cup butter softened
  • 1- 6 oz. cream cheese
  • 2 cups flour
  • For Filling:
  • 1/4 cup butter
  • 2 eggs
  • 1 1/2 cup brown sugar
  • 2 tsps. vanilla
  • Dash of salt
  • 1 3/4 cup chopped pecans

Preparation

Step 1

For Pastry:

In mixing bowl, cream together the butter and cream cheese. Stir in flour and mix well. Cover and chill 1 hour.

For Filling:

In small bowl cream the butter with the brown sugar then beat in the eggs, vanilla and salt.

Shape dough into 1 inch balls then press into ungreased mini muffin pan. Put 1 teaspoon of pecans into each muffin and pour egg mixture in the muffins.

Bake at 325 for 25 minutes.
