Seven Layer Rigatoni

Ingredients

  • 3 cups rigatoni
  • 1 lb Italian sausage
  • 28 ounces crushed tomatoes
  • 3 garlic cloves, minced
  • 3 tbsp fresh garlic
  • 8 ozs mushrooms, sliced
  • 7 ounces roasted red peppers, chopped drained
  • 1 cup parmesan cheese
  • 2 1/2 cups mozzarella cheese

Preparation

Step 1

1. Cook and drain pasta as directed on package.

2. While pasta is cooking, cook sausage in 10" skillet, stirring occasionally, until no longer pink; drain.

3. Mix tomatoes, garlic and basil.

4. Heat oven to 375.

5. Grease rectangular baking dish 13 x 9". Layer half each of the pasta, sausage, mushrooms, peppers, Parmesan cheese, tomato mixture and mozzarella cheese in baking dish. Repeat.

6. Bake uncovered 35-40 minutes or until hot and cheese is golden brown.

This was easy and really great! Much better the following day. Used just 2 cups of mozzarella, and rotini - next time would cut down the mozzarella on top even more.
