Cookies in Bar form take so much less time to prepare! I’ve had Snickerdoodle Cookie Bars on my bucket list for some time now and am happy to report the recipe I brought along to share with you all today does not disappoint! They are absolutely wonderful, my friends. Chewy, buttery and loaded with cinnamon sugar flavor…my family gave them 7 thumbs up. We loved them.

Ingredients

  • CINNAMON SUGAR:
  • 3/4 C butter, softened
  • 1 1/4 C sugar
  • 1/2 C brown sugar
  • 3 eggs
  • 1 tsp vanilla
  • 2 1/2 C flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1 Tb cinnamon
  • 1 Tb sugar
  • GLAZE:
  • 1 C powdered sugar
  • 1-2 Tb milk
  • 1/2 tsp vanilla

Preparation

Step 1

1. Preheat your oven to 350 degrees.
2. Into your stand mixer, or large mixing bowl place 3/4 C butter (softened), 1 1/4 C sugar and 1/2 C brown sugar. Cream the mixture together on medium speed for 2 minutes, making sure to scrape the bottom of the bowl to make sure the butter is being well incorporated.
3. Add 3 eggs and cream for an additional 2 minutes. Add 1 tsp vanilla and mix to combine.
4. In a separate bowl toss together 2 1/2 C flour, 1 1/4 tsp baking powder and 1/2 tsp salt. Add these dry ingredient to the creamed mixture and mix until combined.
5. Spray a 9x13 pan with cooking spray and spread half of the dough out evenly over the bottom of the pan. If you have a hard time spreading it out, spray a butter knife, or rubber spatula with cooking spray and use it to press the dough into the pan.
6. Into a small bowl place 1 Tb cinnamon and 1 Tb sugar. Mix to combined.
Sprinkle 2/3 of the cinnamon sugar mixture over the top of the dough.
7. Scoop the rest of the dough onto the cinnamon sugar in large spoonfuls.
Take a butter knife and swirl the dough into the cinnamon sugar layer and then spread it out (semi!) evenly.
8. Sprinkle the remaining cinnamon sugar over the top of the dough.
9. Bake for 20-25 minutes or until a toothpick inserted into the center comes out (mostly) clean. It's ok to underbake them just a bit. It will help them remain nice and chewy.
10. Remove the pan from the oven and allow them to cool for 1 hour.
11. To make the yummy (optional) glaze, whisk together 1 C powdered sugar, 1-2 Tb milk, 1/2 tsp vanilla and dash of salt.
12. Slice them into bars and drizzle with the glaze.

Yield: 12-24 bars, depending on how large or small you cut them
