Shrimp Tacos with Mango

Delicious with breaded fish, too.

Ingredients

  • Blend Seasonings:
  • Dressing
  • 3/4 cup 3/4 cup mayo
  • 1 T 1 T sriracha sauce (Asian chili sauce or Sweet Chili sauce)
  • Juice of 2 limes. (4 T lime juice)
  • 1.5 tsp 1.5 tsp sugar
  • 1/4 cup 1/4 cup fresh cilantro (chopped) OR use dried cilantro
  • 2 T 2 T water (if needed to thin)
  • Slaw
  • 1/4 cup 1/4 cup cilantro (chopped)
  • 14 oz 14 oz cole slaw mix (bag, not the kit)
  • 1/2 small 1/2 small red onion, chopped
  • 1 1 mango, peeled & sliced in thin strips
  • 2 lb 2 lb shrimp, peeled & deveined & de-tailed
  • vegetable oil
  • tortillas or taco shells
  • chili powder (or sriracha spice), cumin, paprika, salt

Preparation

Step 1

Blend the dressing ingredients in a food processor.

Toss the shrimp with 1/4-1/2 cup dressing.
Heat oil. Add shrimp.
Sprinkle 1/2 of the seasoning on shrimp and cook approx 3 mins. Stir to flip shrimp and season again. Make sure it is cooked through.

Toss the slaw with the rest of the dressing.

Put tortillas on a dinner plate. Cover with a damp paper towel. Microwave for 10-15 seconds.

Fill tortillas with shrimp, slaw and slices of mango. (alternately, mango can be added to the slaw).

Serve with lime wedges and more sriracha sauce.
