Directions

Preheat oven to 350°. Mix together dry ingredients. Set aside. Mix together wet ingredients. Add dry ingredients to wet ingredients just stirring until moistened. Add carrots, nuts and raisins. If batter is too thick, add buttermilk as needed. Stir just until combined. Pour into a greased 8x8 pan and bake 40 to 50 minutes until toothpick inserted comes out clean. When cool, frost with cream cheese frosting.
