- 2 lbs asparagus, trimmed and cut into 2 1/2" pieces
- 1/2 cup pine nuts
- 2 cloves garlic, minced
- 1/4 cup freshly squeezed orange juice
- 1/4 tsp salt

Preparation
Step 1
1.) Bring 1" of water to a boil in a large pot over high heat. Add the asparagus ad cook for 2 minutes or until bright green. Drain and pat dry.
2.) Toast the nuts in a large nonstick skillet over med. heat, stirring often, for 3 to 4 minutes or until lightly browned and fragrant. Tip onto a plate and set aside. Wipe out the skillet.
3.) Coat the same skillet with olive oil cooking spray. Add the asparagus and garlic and cook over med-high heat, stirring, for 2 minutes or until the garlic is lightly browned.
4.) Add the juice and salt and cook, stirring, for 3 minutes or until thickened and the asparagus is tender.
5.) Sprinkle with the reserved nuts before serving.
