Ingredients

  • 5 cups low fat chicken broth
  • 1 large onion, diced
  • 1/2 cup sliced celery
  • 1/2 cup sliced carrott
  • 3 garlic cloves minced
  • 1/2 tsp. dried thyme
  • pepper
  • 4 boneless chicken breasts, cut in 1/2 in. pieces
  • 1 tbls. fresh parsley
  • 3 ounces no yolk noodles

Preparation

Step 1

In a large pot, boil a whole chicken roaster for approximately 1.5 hours.

Remove chicken and shred when cooled.

place broth in refrigerator overnight.

Skim fat from top the following day

In a medium pot combine stock, veggies & spices except parsley. Bring to a boil and cook 5 minutes.

Add chicken and cook for 8-10 minutes until tender. Stir in parsley.

While chicken is cooking, cook noodles as per package directions, drain and add to soup.
