Chocolate-Chocolate Chip Muffins

Ingredients

  • 1 3/4 cups flour
  • 1/2 cup packed brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup warm water
  • 1/4 cup canola oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon pure vanilla extract
  • 1 large egg, lightly beaten
  • 1 cup mini chocolate chips
  • Cooking spray
  • 1/2 cup mini chocolate chips for top (optional)

Preparation

Step 1

Preheat oven to 400 degrees

Mix flour, brown sugar, unsweetened cocoa powder, baking powder, baking soda and salt in a bowl. Whisk together to combine.

Make a well in the center of the dry mixture.

Place water, oil, red wine vinegar, pure vanilla extract and large egg in the well of the dry mixture.

Stir the wet and dry mixtures together with a spoon. Thoroughly mix together and then mix in the mini chocolate chips.

Line muffin pan with cupcake liners.

Lightly spray cupcake liners (the muffin will not stick to the liner after cooking)

Sprinkle the tops of each muffin with more mini chocolate chips (optional)

Cook for 15 minutes or until wooden toothpick inserted into center comes out clean.

Cool for 5 minutes in pan on wire rack.
