Ingredients
- 1 Box Jiffy Corn Muffin Mix
- 1 Egg
- 1/2 C Sour Cream
- 1/2 C Cream Corn
- 1/2 C Red Enchilada Sauce
- 1 Onion, Chopped
- 2 Cloves of minced Garlic
- 1 tsp Cumin
- 1 tsp Chili Powder
- 1 LB Ground Beef
- 1 C Cheddar cheese, shredded
- 1 C Monterrey Jack Cheese, Shredded
- Salt Pepper

Preparation
Step 1
Preheat oven to 400 degrees.
Prepare Cornbread base. Mix Jiffy, Sour Cream, Cream Corn and Egg. Pour into a cast iron skillet and bake for 20 minutes or until slightly brown on top. Cool slightly
While cooking, make taco meat. Brown ground beef. Saute onions and spices and add to cooked beef. Drain.
Poke corbbread with a fork all over. Pour enchilada sauce over it. Top with meat then cheese. Cover with foil and bake about 20 minutes or until cheese is melted. Remove foil and bake 5 more minutes until cheese is browned.
