Italian Macaroni

Ingredients

  • 2 cups (500 ml) tomato juice
  • 1 cup (250 ml) chicken broth
  • 2 tablespoons (30 ml) onion, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon (5 ml) Italian seasoning
  • salt & pepper to taste
  • 2 cups (500 ml) elbow macaroni, cooked
  • 1 cup (250 ml) old cheddar cheese, shredded

Preparation

Step 1

1. In a medium saucepan, combine the tomato juice with the chicken broth, onion, garlic & Italian seasoning, adding some salt & pepper to taste.
2. Cook, uncovered, for about 25 minutes or until it has reduced by half.
3. Stir the tomato sauce mixture into the cooked macaroni. Turn the mixture into a medium sized baking dish. Sprinkle with the old cheddar cheese.
4. Bake in a preheated 375ºF (190ºC) oven for 25 minutes.
