Ingredients

  • 1 tbsp vegetable oil, plus extra for cooking
  • 1 small onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 450 g/1 Ib fresh minced pork
  • 2 tsp ground cumin
  • 2 tsp chilli powder, plus extra to garnish
  • 1 tsp ground cinnamon
  • salt and pepper
  • 6 soft corn tortillas, cut into wedges
  • To Serve
  • shredded iceberg lettuce
  • soured cream
  • finely diced red pepper

Preparation

Step 1

Heat the 1 tablespoon of oil in a heavy-based frying pan over medium heat. Add the onion and garlic and cook, stirring frequently, for 5 minutes, or until softened.

Increase the heat, add the minced pork and cook, stirring constantly to break up any lumps, until well browned. Add the cumin, chilli powder, cinnamon and salt and pepper to taste and cook, stirring, for 2 minutes. Cover and cook over low heat, stirring occasionally, for 10 minutes.

Meanwhile, heat a little oil in a non-stick frying pan. Add the tortilla wedges, in batches, and cook on both sides until crisp. Drain on kitchen paper.

Transfer to a serving plate and top with the pork mixture, followed by the lettuce, a little soured cream and diced pepper. Garnish with a sprinkling of chilli powder and serve at once.
