Ingredients
- 6 cups french fries, any kind
- 10 ounces chorizo
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 10 ounces low-sodium beef broth
- 1/4 teaspoon to 1 teaspoon garlic powder, to taste
- 1/4 teaspoon to 1 teaspoon onion powder, to taste
- 1/4 teaspoon to 1 teaspoon coarsely ground black pepper, to taste
- 1 cup sour cream
- Zest of 1 lime
- 1/4 teaspoon citric acid
- 8 to 12 ounces shredded ghost pepper cheese, pepper jack or cheddar
- Fresh cilantro, chopped

Note: Chorizo is a spicy Spanish pork sausage with paprika and chilies. It is widely available in grocery stores. Mak’s uses bulk chorizo for this recipe. If using chorizo in a sausage casing, remove casings first. Citric acid, also called sour salt, is available at international food stores.
1. Cook the french fries to a medium brown by any method you prefer. Keep warm.
2. Sauté chorizo over medium-high heat in a 10 or 12-inch skillet, breaking up chunks as it cooks. Drain sausage on a plate lined with paper towels and set aside. Wipe out the skillet with paper towels. Add butter and melt over medium heat. Sprinkle flour over the butter, and constantly stir until it turns a light brown.
3. Slowly add beef broth, stirring constantly to blend it in. Dislodge any browned bits from the skillet with a spatula. When the gravy is smooth and slightly thickened, add the cooked chorizo and stir to blend. Cook over medium low heat for 3-5 minutes until thoroughly heated.
4. Taste the gravy, then season with garlic powder, onion powder and coarsely ground black pepper.
5. In a separate bowl, mix together the sour cream, lime zest and citric acid.
6. Divide the French fries among 4 plates. Sprinkle shredded cheese evenly over the fries. Ladle gravy over each plate. Add a large dollop of the sour cream mixture, sprinkle with cilantro and serve.
