MASHED POTATOES WITH ROASTED GARLIC OLIVE OIL

- 4 heads of garlic
- 1/2 cup (125 mL) of extra virgin olive oil
- 6 medium baking potatoes, peeled and cut into large chunks
- A sprinkle or two of salt and lots of freshly ground pepper

Preheat your oven to 3SO°F (190°C).
Tightly wrap each head of garlic in foil. Roast until they're tender and fragrant, about 45 minutes. Unwrap the garlic, and when it's cool enough to handle, slice off the top third of each head with a serrated knife. Squeeze as much as possible of the creamy roasted garlic into a small bowl. Mash with a fork and stir in the olive oil.
Meanwhile, boil, steam, or microwave the potatoes until they're tender. Drain well, then pour in the garlic oil and mash until smooth. Season to your taste with salt and pepper. Serve and share!
Roasting garlic removes its pungent strength, revealing lots of smooth, mellow flavour. But if you prefer your garlic flavour stronger, you can instead mince the garlic, then heat it in the oil until it's sizzling and golden brown before mashing it into the potatoes.
