Ingredients

  • 9 C chicken broth
  • 5 boneless chicken breasts
  • 1 lg red onion chopped
  • 5 cloves garlic chopped
  • 2 t oregano
  • 1 t salt
  • 1 t black pepper
  • 1/2 t dried thyme
  • 1 T vegetable oil
  • 4 green onions chopped
  • 1 large green chili pepper, seeded and chopped
  • 2 lg tomatoes or 1 can diced tomatoes
  • 6 limes juiced
  • 1/2 whole lime
  • 1/2 C fresh cilantro

Preparation

Step 1

Bring broth, chicken, red onion, garlic, oregano, salt and pepper, thyme to boil. Reduce heat to med-low simmer until chicken cooked 15-20 minutes. Remove chicken to board and shred, return to pot.

Heat oil and cook green onion and green chili pepper in oil for about 5 minutes, stir in tomatoes and cook additional 5 minutes.

Pour mixture into chicken pot, season with salt. Add lime juice and 1/2 a lime. Cook about 10 minutes. Remove from heat, remove 1/2 lime, stir in fresh cilantro and serve.
