Chorizo & Cheese Quesadillas

Ingredients

  • 115 g/4 oz mozzarella cheese, grated
  • 115 g/4oz Cheddar cheese, grated
  • 225 g/8 oz cooked chorizo sausage, outer casing removed, or ham, diced (if you don't like the heat of chorizo)
  • 4 spring onions, finely
  • chopped 2 fresh green chillies, such as poblano, deseeded and finely chopped
  • salt and pepper
  • 8 flour tortillas
  • vegetable oil, for brushing
  • lime wedges, to garnish

Preparation

Step 1

Place the cheeses, chorizo, spring onions, chillies and salt and pepper to taste in a bowl and mix together. Divide the mixture between 4 flour tortillas, then top with the remaining tortillas.

Brush a large, non-stick or heavy-based frying pan with oil and heat over medium heat. Add 1 quesadilla and cook, pressing it down with a spatula, for 4-5 minutes, or until the underside is crisp and lightly browned. Turn over and cook the other side until the cheese is melting. Remove from the pan and keep warm. Cook the remaining quesadillas individually.

Cut each quesadilla into quarters, arrange on a warmed serving plate and serve, garnished with lime wedges.
