Ingredients

  • 1/3 cup butter or margarine
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon grated orange peel
  • 1/2 cup orange juice
  • 1/4 cup milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Preparation

Step 1

Place butter and sugar in mixer bowl. Attach bowl and flat beater to mixer. Turn to Speed 6 and beat 1 minute. Stop and scrape bowl. Add egg, orange peel, orange juice, and milk. Turn to Speed 4 and beat 30 seconds.

Combine flour, baking powder, baking soda, and salt, and add to bowl. Turn to Speed 2 and mix 15 seconds, or just until moistened. Do not over beat.

Fill greased muffin tins two-thirds full. Bake at 400°F for 20 to 25 minutes. Serve warm.
