Ingredients

  • 1 1/2 lbs ground lean beef (5% or less fat)
  • 1 onion, chopped
  • 1 small pepper, chopped
  • 1/4 cup + 6 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 large egg, lightly beaten
  • 2 tbsp cornmeal
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper

Preparation

Step 1

1) Preheat oven to 350. Spray a medium sheet w/canola oil spray

2) Combine beef, onion, pepper, 1/4 cup ketchup, mustard, egg, cornmeal, garlic, oregano, salt and ground pepper, mixing until just blended. Form into 6 oval loaves. Transfer to baking sheet. Spread 1 tbsp ketchup over top of each loaf. Bake until a thermometer registers 160, 40-45 minutes. Let stand 5 minutes before serving.
