Sweet Red Pepper Sage Bread

Made with semolina flour, this is a very light bread. The sage, toasted sesame seeds, and roasted sweet red bell peppers make it very flavorful.

Ingredients
- 1/2 cup milk
- 1/3 cup chopped, roasted sweet red peppers
- 2 tbsp olive oil
- 1 tbsp sugar
- 3 tbsp toasted sesame seeds
- 1 tsp salt
- 1/2 tsp dried sage
- 1 1/3 cups bread flour
- 2/3 cup semolina flour
- 1 1/2 tsp yeast

Step 1
Put ingredients in bread pan in order suggested by your bread machine instructions. Set for white bread, medium crust. Press Start
To toast sesame seeds: put seeds in a small, dry skillet over medium heat. Stir or shake the pan frequently to stop seeds from scorching. Let seeds cool before using.
To roast sweet red bell peppers: cut each pepper into 3 or 4 nearly flat pieces. Place on broiler pan or doubled sheet of aluminum foil. Cook under the broiler until skin turns black and blisters. The pieces won't cook evenly; remove each piece when it is done. As you remove each piece, put it in a bag or foil envelope to steam for 10 minutes, then peel off skin.
If you add the peppers at the beginning of the kneading, in combination with yellow semolina flour they will turn the bread orange. They will also release more moisture into the bread. If you add the peppers late in the kneading, you may need to add another tablespoon of milk. You may use bottled roasted red peppers or roast your own.
