Ingredients

  • 1 1/2 cups cake flour
  • 3/4 cup sugar
  • 3/4 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoon butter room temperature
  • 1/2 cup oil
  • 3 large eggs
  • 1/2 cup strawberry spreadable fruit
  • 1 teaspoon vanilla
  • 3 drops red food coloring
  • 1/4 cup sliced strawberries for garish
  • LEMON CREAM
  • 1 cup mascarpone room temp
  • 3 cups heavy whipping cream
  • 1 cup lemon curd
  • LEMON SUGAR
  • 1 lemon zested, dried overnight
  • 1 cup sugar

Preparation

Step 1

preheat oven 350*
prepare 3 6 inch cake pans by spraying with cooking spray
in a large mixing bowl, combine flour, sugar, baking powder and salt
add butter and oil
in a medium bowl, combine eggs, strawberry spreadable fruit and vanilla
add to the flour mixture and stir to incorprate
Divide the batter between the prepared cake pans and bake 15 to 20 minutes, until cake is set and pulls away from the pan
cool 10 minutes then remove from pan and transfer to a rack to cool completely
Spread some of the lemon curd on the first cake
dollop some of the mascarpone cream on top of the curd as spread into an even layer
Place the second cake on top and then continue building with the remaining lemon curd, mascarpone cream and cakes
finish by topping with lemon cream
sprinkle the cake with the lemon sugar ad garish with sliced strawberries
