Ingredients
- 1 tbsp olive oil
- 1 dry chorizo sausage (1 1/2 oz), diced
- 1 tsp ground cumin
- 1/4 tsp ground chipotle chile pepper
- 1 onion, chopped (about 1 cup)
- 3 cups cooked brown rice, cold
- 1 cup pumpkin seeds, toasted
- 1/2 tsp salt
- 2 tbsp chopped fresh cilantro
- 1 tsp freshly grated lime zest
Preparation
Step 1
1.) Heat the oil in a large nonstick skillet over med-high heat. Add the sausage and cook for 2 minutes or until lightly browned.
2.) Stir in the cumin and chile pepper and cook for 15 seconds or until fragrant.
3.) Stir in the onion and bell pepper. Cook, stirring often, for 2 to 3 minutes or until crisp-tender.
4.) Add the rice and cook, stirring often, for 1 to 2 minutes or until lightly toasted.
5.) Stir in the pumpkin seeds and salt and cook for 1 minute longer.
6.) Remove from the heat and stir in the cilantro and lime zest.
