  • 1/4 C almond flour
  • 1 T ground flax seed
  • 1 large egg
  • 2 T sugar substitute
  • /2 t baking powder
  • 1 t melted butter
  • 1/2 t cinnamon

Preparation

Step 1

Add all ingredients to a microwave-safe coffee mug, and mix with a fork until well combined.

Microwave for about 1 minute on high or until batter rises in cup, and a toothpick stuck into the center comes out mostly clean

Let cool 3 minutes before serving.

*top with cream cheese, add pecans, or your favorite nuts.
