Ingredients

    burrito sized tortillas (corn tortillas for gluten-free), warmed

  • 1

    pound cooked chicken, sliced or shredded

  • 1

    large avocado, diced

  • 1

    cup Monterey Jack cheese, shredded

  • 1/4

    cup salsa verde

  • 1/4

    cup sour cream or greek yogurt

  • 2

    tablespoons cilantro, chopped

    pound boneless and skinless chicken breasts

    limes, juice and zest or 1/4 cup lime juice

    tablespoon oil

    tablespoons cilantro, chopped

    clove garlic, grated

    jalapeno, finely diced (optional)

  • salt and pepper to taste

Directions

directions 1.Assemble the burritos, optionally toast, and enjoy! Option: Use cilantro lime grilled chicken or tequila lime grilled chicken instead of plain chicken. 1.Marinate the chicken in the mixture of the lime juice and zest, oil, cilantro, garlic, jalapeno, salt and pepper for 30 minutes to overnight. 2.Grill the chicken over medium-high heat until cooked, about 3-5 minutes per side. Option: Cut the chicken into bite sized pieces and skewer it up before grilling.
