Marinated Italian Veggies

Ingredients

  • Vegetables:
  • 2 portabella mushrooms
  • 1-2 cups green beans
  • 1-2 red peppers
  • 1 zucchini
  • 1-2 green onions
  • 1 bulb garlic, peel each section
  • Marinate:
  • juice 1-2 lemons
  • 2/3 cups olive oil
  • 1/2 tsp dried basil or fresh - 1/2 cup
  • 1/2 tsp dried oregano
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/4-1/2 tsp Celtic or Himalayan salt

Preparation

Step 1

Combine above ingredients and pour over veggies above. Let sit for 6-8 hours. You can put all the veggies and marinade in a large glass jar and place in the fridge for 6-8 hours. You may have to turn it on its side so that all of the veggies get coated with marinade.
You can also dehydrate the veggies and marinade for 6-8 hours.
