Ingredients
- Vegetables:
- 2 portabella mushrooms
- 1-2 cups green beans
- 1-2 red peppers
- 1 zucchini
- 1-2 green onions
- 1 bulb garlic, peel each section
- Marinate:
- juice 1-2 lemons
- 2/3 cups olive oil
- 1/2 tsp dried basil or fresh - 1/2 cup
- 1/2 tsp dried oregano
- 1/2 tsp dried rosemary
- 1/2 tsp dried thyme
- 1/4-1/2 tsp Celtic or Himalayan salt
Preparation
Step 1
Combine above ingredients and pour over veggies above. Let sit for 6-8 hours. You can put all the veggies and marinade in a large glass jar and place in the fridge for 6-8 hours. You may have to turn it on its side so that all of the veggies get coated with marinade.
You can also dehydrate the veggies and marinade for 6-8 hours.
