Dijon Herb Crusted Salmon

Ingredients

  • 2 6oz salmon filets
  • 1/4 t each salt & pepper
  • 1/4 C panko
  • 1 T finely chopped flat leaf parsley
  • 1 T olive oil
  • 2 t chopped thyme
  • 1 t Dijon mustard
  • 2 T plain yogurt
  • 2 t chopped fresh dill
  • 1 1/2 t milk
  • 1 t red wine vinegar

Preparation

Step 1

Preheat grill or oven to 450.

Arrange salmon on parchment lined baking sheet. Sprinkle with salt & pepper.

Combine panko, parsley, oil, thyme & Dijon in small bowl.

Bake salmon in oven 10 min. Remove pan from oven. Turn on broiler. Spoon panko mixture evenly over salmon. broil 1-2 min until topping is browned.

Combine yogurt, dill, milk & vinegar in small bowl & serve with Salmon

Serve with warm buttered radish & edamame salad; see recipe in vegetables
