Ingredients

  • 2 T olive oil
  • 3 C nonfat beef broth
  • 2 garlic cloves (minced)
  • 2 T tomato paste
  • 2 C chopped cabbage
  • 1/2 C chopped onion
  • 1/2 C chopped carrots
  • 1/2 C chopped zucchini
  • 1 can green beans (drained)
  • 1 can diced tomatoes (with juice)
  • 1/2 t basil
  • 1/2 t oregano
  • salt and pepper to taste

Preparation

Step 1

Add olive oil to a large pot over med-high heat. Saute onion, carrot, and garlic for 5 min. or until softened. Add the tomato paste and stir for 1 min. Deglaze the pot with a little of the beef broth, continue to stir scraping up the brown bits. Add the rest of the ingredients except the zucchini and cook for 10min. Now add the zucchini and cook for another 5min.
