Ingredients
- 2 tablespoons olive oil
- 8 Italian sausages
- 3 cloves garlic,peeled and minced
- 2 large yellow onions,peeled,halved and sliced
- 2 large green bell peppers,seeded and cut into strips
- 3 large red bell peppers,seeded and cut into strips
- 1 1/2 teaspoons dried Italian herbs or oregano
- 1/4 cup (60 ml) dry white wine
- 2/3 cup (160 ml) reduced-sodium chicken broth
Preparation
Step 1
In a pressure cooker,heat olive oil over medium-high heat. Using a tip of sharp knife,prick Italian sausages to avoid bursting while cooking. Working in a batches,add sausages to hot oil and brown on all sides,about 2 minutes per batch. Remove browned sausages form pressure cooker and transfer to a plate.
Step 2
Add minced garlic to hot oil and cook,stirring,for 30 seconds. Remove from pressure cooker and transfer to the same plate.
Step 3
Add onions and cook,stirring,until soft,for 3 minutes. Remove from pressure cooker and transfer to a plate.
Step 4
Add bell peppers and cook,stirring,until soften,for 3-5 minutes. Return cooked onions to the pot.Toss with peppers. Season pepper mixture with Italian herbs.Add white wine. Scrap any browned bits from the bottom of pot and simmer until wine completely evaporated.
Step 5
Return browned sausages and garlic to the pot with any accumulated juice. Cover with onions and peppers. Pour chicken broth over.
Step 6
Close pressure cooker and lock the lid. Set burner heat to high pressure. When pressure cooker reaches high pressure,reduce heat to low. Set timer to cook for 6 minutes.
Step 7
Remove pot from the heat. Carefully open pressure cooker. The sausages should be cooked through.
Step 8
Transfer cooked Italian sausages and vegetables to serving platter. Serve immediately
