Flatbread

Ingredients

  • 1/2 C warm water
  • 1 packet 2 1/4 teaspoons active dry yeast
  • 2 1/2 C all purpose flour
  • 1/2 C whole wheat flour
  • 1 t. salt

Preparation

Step 1

Pour warm water into bowl. Sprinkle the yeast on top and let rest for 2 min. until the yeast foams.

Add the flours and salt to the bowl of mixer. With mixer on low add the water slowly until dough forms. It should be sticky. This can take up to 8 minutes. You may not need all the water, or you may require more.

Place the ball of dough in lightly oiled bowl. Cover with cloth and let rise for 1 hr.

Remove dough and knead by hand briefly. Divide into 12 equal size balls. Roll each to a diameter of 6 inches 1/4 inches thick.

Heat a dry 12 inch cast iron skillet over high heat. Add one disc of dough and cook lightly until browned on the bottom. Use tongs to turn the dough and cook for 1 minute longer. Repeat.

Serve warm or store into airtight container for up to 2 days. Can be frozen.
