Artichokes in a Slow Cooker

Ingredients

  • Artichokes
  • Lemon juice
  • Olive oil
  • minced garlic

Preparation

Step 1

Trim the artichokes, cutting off the stem and snipping the tips of the leaves.
Spread open the petals and drizzle with lemon juice and olive oil. Lightly sprinkle with salt. If desired, stuff minced garlic in between the petals.

Pour 1/2 cup of white wine into a crock pot, then fill with another 2 inches of water; the liquid should not cover more than the bottom quarter of the artichokes.

Cook covered, on high, for 3 to 4 hours, depending on the size of the artichokes. Artichokes are perfectly done when a knife can go through the base as it would a fully baked potato.
