Ingredients

    lb large shrimp, peeled, deveined, and patted dry

  • 1/4

    tsp salt, or to taste

  • 4

    tsp olive oil, divided

  • 6

    garlic cloves, finely chopped

  • 1 1/2

    tsp sweet smoked paprika

  • 1

    TBS chopped fresh parsley

  • 1

    TBS chopped fresh cilantro, plus extra for garnish

  • 1/2

    tsp lemon juice

Directions

Toss shrimp with salt. Heat large heavy skillet over high heat until very hop. Lightly coat pan with 1 teaspoon oil; heat until lightly smoking. Add half of shrimp in one layer. Cook just until golden and orange, about 10 seconds more; transfer to plate. Repeat with remaining shrimp and 1 teaspoon oil. Reduce heat to medium-heat; add remaining oil. Add garlic and cook, stirring, until light golden but not browned, about 2 minutes. Stir in paprika; return shrimp to pan. Reduce heat slightly and cook until shrimp are just opaque in center, about 1 minute; stir in parsley, cilantro, and lemon juice. Serve shrimp with pan sauce spooned over top and garnish with additional cilantro. 3 Smartpoints per serving
