Ingredients
- 2 tsp. olive oil
- 10 oz. diced chicken
- 1/2 cup frozen corn
- 1 can black beans, drained
- 1 red bell pepper diced
- 1 cup rice or 3/4 cup barley
- 1 cup salsa
- 1/2 cup shredded Jack cheese

Preparation
Step 1
Heat oil in skillet over medium heat. Toss chicken with some taco seasoning & brown in skillet. Add corn, pepper & black beans & cook for 5 minutes. Season with salt & pepper. Add salsa & heat thru. Add cooked rice or barley, mix well & place desired amounts in bowls. Top with cheese & serve with heated tortillas.
Makes 4 generous servings.
