Ingredients

    tsp. olive oil

  • 10

    oz. diced chicken

  • ½

    cup frozen corn

  • 1

    can black beans, drained

  • 1

    red bell pepper diced

  • 1

    cup rice or ¾ cup barley

  • 1

    cup salsa

  • ½

    cup shredded Jack cheese

Directions

Heat oil in skillet over medium heat. Toss chicken with some taco seasoning & brown in skillet. Add corn, pepper & black beans & cook for 5 minutes. Season with salt & pepper. Add salsa & heat thru. Add cooked rice or barley, mix well & place desired amounts in bowls. Top with cheese & serve with heated tortillas. Makes 4 generous servings.
