Ingredients
- 1/3 c. butter, melted
- 1/2 c. sugar
- 1 egg (preferably room temperature)
- 1 1/2 c. all purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 1/2 c. milk
- Topping (option: cut topping in half*)
- 1/2 c. sugar
- 1/2 c. butter, melted
- 1 tsp. cinnamon
Preparation
Step 1
Pre-heat oven to 350 degrees F.
In a medium sized mixing bowl stir together the flour, sugar, baking powder, salt and nutmeg. Next, add in the milk, butter, egg, and stir together till JUST combined. You don't want to overmix or else the glutens will over develop and you'll end up with a tough muffin.
Spray a large muffin tin with cooking spray. Use a 1/4 cup scoop to portion the batter into 8 large muffin tins. Bake for 20-25 minutes.
Once the muffins are done dip them in the melted butter while they are still warm and then roll them in the cinnamon sugar. Now walk away from the muffins because you will eat them all and gain 50 pounds. Just kidding, enjoy your Saturday!!!
