  • 1 box lemon cake mix
  • 1 large egg
  • 8 tablespoons melted butter
  • filling
  • 1 8oz cream cheese
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon lemon
  • 1 tablespoon lemon zest
  • 8 tablespoons melted butter
  • 16 oz powdered sugar

Preparation

Step 1

heat oven 350*
grease 9X13 pan with butter or cooking spray
place the cake mix, egg and melted butter in a large bowl
mix well using a large spoon until well combined
scrape batter into prepared pan and smooth out
batter is stiff and will need to be pushed around by hand
filling
in a bowl of an electric mixer fitted wot the paddle attachment beat the cream cheese at medium speed until smooth
add the eggs and vanilla, lemon and lemon zest beat well
add the melted butter and beat until combined
slowly add the powdered sugar, 1/4 at a time, beating after each addition
using a spatula, spread the filling over the cake mixture and bake for 40 to 50 minutes
YOU WANT THE CENTER TO BE A LITTLE GOOEY, SO DO NOT OVER BAKE
stick a toothpick in the center and you should see a few wet crumbs stick to it
