BLT CHICKEN SALAD SANDWICH WITH BASIL

Ingredients
- 1 pound cooked chicken breast cut into 1/2 inch cubes
- 2 cups cherry tomatoes, halved or quartered
- 6 ounces bacon cooked and crumbled
- 3/4 cup mayo
- 1 1/2 cups packed fresh basil
- 2 t zest
- 1 1/2 T lemon juice
- 6 hotdog buns
- 2 T butter
- baby romaine

Preparation
Step 1
In food processor combine mayo, basil, lemon zest and juice until smooth, add a little water if dressing is too thick.
Brush hotdog buns with butter and toast on skillet.
Pat tomatoes dry and combine with bacon, chicken and dressing.
serve on toasted hotdog bun lined with lettuce.
